15 Crus V3 is an exclusive vintage, designed for demanding catering and sommelier professionals.
Produced in an ultra-limited edition (around 5,000 bottles), it concentrates the best of the House's vineyard: 15 crus selected by plot, in the heart of the Montagne de Reims, including the Grand Cru villages of Verzy and Verzenay.
After an emblematic V2 (2012-2013-2014), the V3 is part of a more radical and pure continuity, resulting from three new vintages: 2014, 2015, 2016.
The dosage, deliberately discreet (Extra Brut), lets the identity of the wine speak without artifice.
Each bubble seems to carry a note of fine salt, a blade of citrus, a persistent mineral echo.
It is a champagne of terroir, of character, of verticality, in the spirit of great modern champagnes.
Matured Chaource, served at room temperature
The fat of the cheese interacts with the chalky touch of the wine, while the acidity
milky reactivates the saline finish. It is a sober and deep accord, where
the wine unfolds in full length.
Bresse poultry, clear juice infused with citrus fruits

The silky texture of the poultry reveals the finesse of the champagne, while
that the infused juice (citrus, thyme, zest) reactivates its freshness
natural. The discreet smoothness of the wine, inherited from its 8 years on lees,
balances with the delicate flesh of the dish. A sober, noble and
vibrant.
Roasted white asparagus, almond cream and candied lemon Asparagus,
complex product in harmony, finds here a perfect companion. The grilled
light highlights the minerality of the champagne, the almond cream
responds to its roundness, and the candied lemon comes to awaken the tension. A
elegant and textured vegetarian dish, designed as a mirror of wine.
Each 15 Crus vintage is based on an exclusive perpetual reserve, maintained as a living heritage.
V3 is enriched with the complexity of these three vintages, and enhanced by 8 years of aging on lees.
This slow evolution gives the wine a chiseled and deep mouth, a fluid but textured material, with a touch of chalk, iodized bursts, and an unforgettable saline length.
