A champagne born from an encounter, designed for an exceptional dessert

The magical pairing of champagne and pastries

The story of this vintage begins in Paris, in 2016, during an unexpected conversation with the president of Maison Ladurée, David Holder.

At the time, Ladurée already offered champagne to its customers, but none had been designed to truly engage with the world of pastry, and even less with the macaron, this fragile, crispy and melting icon.

Accompanied by their pastry chef Claire Heitzler, whom we deeply admire, we selected several vintages, tasted, refined, and listened to what the macaron had to tell us: its meringue crunch, its silky ganache, its sweet but precise delicacy.

Thus was born the Special Macaron cuvée, with the simple but ambitious idea: to create a pastry champagne, but not a sweet wine, a gourmet, delicate, vibrant wine — capable of responding to the complex texture of the macaron without ever crushing it.

The macaron, as if it were obvious – but not only

Designed for macarons, this vintage pairs well with many other fine sweets.

🌸 The timeless classic: vanilla or pistachio macaron

The subtle sweetness of the biscuit, the richness of the ganache, the overall texture… the wine acts as an elegant binder, without overpowering. It reveals, prolongs, and cleanses the palate.

🍋 The interplay of contrasts: lemon or citrus macaron

The lemon's acidity complements that of the wine; the sugar finds its balance in the bubbles. An energetic, refreshing pairing, with a lingering, delicious tension on the finish.

🍓 The perfect pairing: strawberry tart, Breton shortbread, light whipped cream

Red berries and crisp biscuit find a natural echo in the Pinot Noir of this wine. The cream envelops, the champagne elevates. A joyful and sensory pairing.

The same blend as Brut Nature, but with a different interpretation.

A duo like no other

Made from the 2018 harvest, this cuvée is based on the same blend as our Brut Nature.

A majority of Pinot Noir for its luscious expression, its round and delicate red fruits,

A chalky Chardonnay for balance, mineral freshness and precision.

But here, the dosage changes everything: dosed as Extra Dry, this vintage gains in generosity, roundness, and aromatic suppleness .

This is not a sweet wine: it is a rich wine, which softens textures and offers a lingering finish, ideal for extending the enjoyment of a dessert.

The 2018 vintage, sunny and balanced, provided an ideal base for this gourmet interpretation.

In the Montagne de Reims, the Pinot Noirs produced round, flavorful juices with aromas of candied fruit and fruit paste.

On the Côte des Blancs, the Chardonnays have managed to retain tension and brightness, necessary to maintain the liveliness of the wine despite the dosage.

Tasting notes: tender fruit, luscious structure, joyful finish
